Mexican cuisine
Mexico has been lucky with abundance of the first class food products as well as with the people, able to achieve real taste experiences in the art of cooking. The Mexicans, processing products by all possible ways, have created a fascinating "encyclopedia" of dishes with the most various flavour shades. One of the characteristic features of the Mexican cuisine is a fragrant bunch of aromas, coming from the spices added in food. That is speaking about the abundance of tastes. However, it would be a mistake to think, that all of the Mexican dishes must be sharp and strongly overspiced. Some of them have a thin moderate taste which does not interfer the natural aroma of high-quality components. Even if spices are added, it is done with a feeling of measure so that the food maintains it`s softness and harmony. Not all dishes contain chili pepper, but the ones which do, can be prepared both in sharp or in softer variant, up to your taste. 
One of the conclusive advantages of the Mexican dishes consists in that they are easy to prepare in home conditions: the recipes are simple, components (with a few exceptions only) are easy to find on sale, there are no difficult garnishes or decorative elements. The characteristic features of the temperamental, friendly and cheerful Mexicans are reflected also in their food which is an inexhaustible source of a carefree pleasure. The culinary style we call Mexican today, was developed within many centuries. This style originates on ancient civilizations of Aztecs and Mayas. A rich choice of various products was accessible to these people: corn, avocado, beans, sweet potatoes, regular potatoes, tomatoes, chili pepper, pumpkins, meat of duck and turkey, cocoa and several kinds of fish living in the coastal waters of Mexico. In 1519 Spanish conquistadors began to bring cattle, hen, pigs, rice, wheat, cinnamon, cloves, black pepper, oranges, peaches and apricots over to Mexico from the Old World . Soon Mexicans apprehended these "innovations" which did not considerably change their culinary traditions but, on the contrary, only strengthened and developed them. In the middle of the last century Mexican cuisine was influenced by the French cuisine. The certificate to that is a wide range of various very tasty buns, cakes and puddings, wich are very beloved until today. Mexico borders on the United States, therefore it is no wonder that nowadays the nfluence of the American cuisine is remarkable there. USA in it`s turn promotes the distribution of Mexican cuisine worldwide. It is necessary to notice, that "Tex-Mex" restaurants are much more difficult to find in Mexico than behind it`s border.
